Today I feel frustrated. About politics, money, my job situation, and life. Boo!
This is worth watching, as it is hilarious:
Through the month of May, Jon and I have decided to eat gluten-free. So far it is going well. In the last day or so I started craving bread or something cakey, so he got some gluten-free bread and donuts from Three Rivers. I am really surprised at how much I enjoyed both. They were not exactly like the regular stuff, but close enough that I didn’t miss having wheat.
We’ve made some really good food so far. I may have to share some recipes. We’ve also eaten a lot more veggies, which is wonderful. I’m hoping to see some weight-loss results by the end of the month. I read that a gluten intolerance can be the cause of weight gain. I hope that is my problem because that will be easy to fix. I guess we’ll see.

Thanks, I do too. I hope you and Eric are doing OK. I know how awful it is to lose a pet. I’m still thinking of you guys!
I’d be interested to see what sort of recipes you are finding taste good.
Angela, I’ll make a post with a couple of my favorite recipes. So far I’ve surprised myself at how much I haven’t missed the gluten. Also, it’s cutting my carbs way back. I started using http://www.myfitnesspal.com to track my food. Carbs are down, but fat content is up, unfortunately. I’m going to have to push that back down. It’s probably up because we’ve started doing more recipes with pork as a main ingredient.
