I started using My Fitness Pal to track my calories and exercise. So far I really like the program. I’ve been doing it 6 days now and I’ve come in under my calorie goal every day except 1 and on that day I exactly matched it. I have had issue with fat content. I think it’s because I’ve been doing gluten-free, and so eating more meat. But not just any meat. I’ve been eating more pork. So I”m going to work to cut my pork intake way down. Chicken breast is a much better choice because it’s low fat and high protein.

I’ve also determined that the elliptical is a much better exercise for me than intervals on the treadmill. I may also take time to get some swimming in this weekend when I go home to Crossville. I’m also thinking of taking up jogging/running in the early mornings. I’m thinking about it at this point. I’m not a fan of running and never have been.

A friend send me this website that has some great low-fat and low-calorie food options. I’m looking forward to trying some of that. Mostly I’m trying to make actual realistic changes to my diet instead of doing temporary things or things I don’t like. I’m still eating chocolate and drinking regular, caffeine free coke. Fat free Ranch is horrible, so I just limit myself on the real stuff. I love food and cooking and I want it to stay pleasurable. I just want to figure out a better system for myself.

If you’re interested, this is a great recipe for quinoa cakes. I made them the other night with a few substitutions. Instead of regular cheese I used Daiya tapioca cheese. Instead of flour, I used gluten-free flour. Instead of 2 tsp of black pepper, I used 1 tsp black pepper, 1/2 tsp cayenne pepper, and 1/2 tsp crushed red pepper flakes. So good and so spicy! I used regular ranch dressing instead of making an aioli because I didn’t have the time. It was really good and satisfied my craving for a roll.
